Baking, Baking, Baking

My daughter Loves to bake.  So now that we have power back, we've been on a baking spree.  In fact we may have gone a little crazy.
I've been planning to make zucchini bread out of our several very large zucchinis.  Ladybug took over and made us two very yummy zucchinis breads.  She also looked through our cook book
and decided to make a sugar cookie pizza.  I mostly just supervised, since that's become my new job when Ladybug's in the kitchen.  I did however get to make some applesauce and rice krispie treats.  Hopefully in the next couple days I'll have a chance to make some waffles too. 
My kids love toaster waffles.  Monkey can't eat them because of the dye used in toaster waffles.  So I'll make a double batch of waffles and freeze them for the kids.  It's definitely more time consuming, but then everyone gets to eat them and it costs less.
My kids really enjoy having some homemade treats in their lunch boxes.  They even bring some to share with friends.

Recipes of we made:

Zucchini Bread:
Prep. 15min  Bake 55min
Ingredient - 1 1/2cup flour            1teaspoon ground cinnamon                1/2teaspoon baking soda
1/4teaspoon baking powder         1/4teaspoon salt                                  1/4teaspoon ground nutmeg
1cup sugar                                   1cup shredded zucchini                        1/4cup cooking oil
1 egg                                           1/2cup chopped walnuts or pecans (optional)

Preheat oven 350.  Grease a 8x4x2inch loaf pan, set aside.  Mix flour, cinnamon, baking soda, baking powder, salt, and nutmeg, set aside.  In another bowl mix sugar, zucchini, cooking oil, and egg.  Add dry mixture to zucchini mixture.  Stir till moistened.  Fold in nuts.  Spoon batter in prepared pan.  Bake for 55-60 min.

Sugar cookie pizza:
Ingredients - 1/3cup butter          1/3cup shortening                               3/4cup sugar
1teaspoon baking powder           1 egg                                                 1teaspoon vanilla
2cups flour                                 cream cheese frosting                  candy-coated milk chocolate pieces or other candies

Preheat oven 375.  Beat butter and shortening.  Add sugar, baking powder, and a dash salt.  Beat till combined.  Beat in egg and vanilla.  Beat as much of the flour as you can with the mixer.  Stir in remaining flour.  On a lightly floured surface roll out dough.  Spread into an ungreased 12inch pizza pan.  Bake for 18-20 minutes.  Spread cream cheese frosting over cookie.  Decorate with candy-coated milk chocolate pieces or other candies.

Applesauce:
Ingredients - 3pounds cooking apples (9 medium)           1cup water                 1/4teaspoon cinnamon

Peel, cut and core apples.  (I have an apple cutter/corer to make this process easier)  Combine apples and water in large pot.  Bring to boil, cover and reduce heat.  Simmer, covered for 8-10 minutes.  Apples should be tender.  Add cinnamon and mash apples with a potato masher, blender, or food processor to desired texture.

Rice krispie treats:
3tablespoons butter                1 package (10oz) marshmellows                 6cups Rice Krispies

melt butter in large pot.  Add marshmellows and stir till completely melted.  Add Rice Krispies and stir till well coated.  Using a buttered spoon press mixture into a 13x9x2inch pan coated with cooking spray.  Let cool then cut.
